About the Recipe

Ingredients
1/2 lb raw shrimp or white fish (snapper, halibut), diced
1/3 cup fresh lime juice
1/4 cup Lonely Cow Sauvignon Blanc
1 small mango, diced
1/4 red onion, finely chopped
1 small cucumber, diced
1 jalapeño, finely chopped (seeds removed for less heat)
Fresh cilantro, chopped
Salt to taste
Optional: 1/2 avocado, diced
Mini phyllo cups or endive leaves for serving
Preparation
Instructions:
Marinate: In a glass bowl, combine the diced shrimp or fish with lime juice and Sauvignon Blanc. Cover and refrigerate for 15–30 minutes, until the seafood turns opaque.
Drain: Strain out most of the marinade, leaving a little for moisture.
Mix: Add mango, red onion, cucumber, jalapeño, cilantro, salt, and avocado if using. Toss gently.
Assemble: Spoon into mini phyllo shells or endive leaves.
Serve chilled with a crisp glass of Lonely Cow.
